More and more distilleries are moving back to the heart of the city, and this is the case of Teeling, which has been located in the centre of Dublin since 2015. Symbolized by a phoenix with a trendy spirit of renewal, it is historically a few blocks away from the very first distillery founded in 1782. This single malt is the classic style of Irish whiskey, made from 50/50 malted and unmalted barley and triple distilled. For the limited edition Wonders of Wood, the distillery works with the Tree Council of Ireland to contribute to the planting of local tree species. The distillery also experiments with flavours by using different styles of wood for maturation and, in this case for the second edition, virgin Portuguese oak casks, which are known to impart notes of marmalade, tobacco and pepper.
