Description

The Waterford distillery was founded in 2015 in the south of Ireland, on the banks of the river Suir, on the site of a former Guinness brewery. With this single malt, the distillery focuses on traceability and especially on the biodynamic farming of its barley, which is based on ancient traditions of lunar cycles and esotericism. The barley used is an Olympus variety grown by three Irish farmers on two types of soil, harvested in summer 2017. The whiskey was then distilled in 2018 and aged for 3 years, 2 months and 1 day in a varieties of casks including 35% first fill American casks, 17% virgin American casks, 26% French wine casks mainly from Château Lafite Rothschild and 22% casks of natural sweet wine, Porto and Amarone. The whiskey was bottled in September 2021 with its natural colour and without chill filtration.

Tasting notes by the Rêves de Whisky team: On the nose, a whiskey with a grassy freshness. On the palate, notes of earthy grass and vegetable garden such as peppers, followed by a more citrusy presence, lemon and grapefruit with a little spice.
