It is above all the variety of barley used, the "Bere Barley" which gives the aromatic typicity to this whisky: An old variety of six-row barley, already cultivated in Scotland more than 5000 years ago. It’s a low yielding barley with a dense grain that is difficult to grind. For this edition, the distillery used barley grown on the Orkney Islands in 2011. Distilled in 2012, the whisky was matured for 10 years in first fill ex-bourbon casks. A whisky that is bottled on the island of Islay unchill-filtered and colouring free.
Tasting notes of the distillery: Notes of zesty lime and green apple, with a subtly spiced gingerbread finish.
